Mike Wallis - The Eagle Public House Norwich

Head chef Mike Wallis started out as a pot wash at the George hotel in Swaffham to earn money whilst at college studying engineering. During these two years his passion for food began and he was then offered a job as a commi chef.

Overtime he progressed to junior sous chef and understanding that he needed more knowledge of food, he moved to Norwich and worked in various restaurants throughout the city including Auberge and Brasteds.

During his time at Brasteds he became head chef and was able to focus on a deeper understanding of food and presentational skills. From there he moved to The Eagle.

'The style of food we aim for at The Eagle is a traditional rustic style of cooking with a modern twist. We have a large garden with play area. We also cater for BBQ's'.
