Eventually after working in other kitchens including travelling to Australia and Asia, he returned to Titchwell Manor as Head Chef.
Eric grew up by the sea and he finds its really exciting creating new menus using the pick of quality ingredients produced from just a few miles from Titchwell. The rich pastures of Holkham Hall estate, where they gently rear rare breeds of cattle, lamb and pig as well as their famous deer herd and all types of game. Brancaster is famous for the clean water and creeks which provide mussels, oysters and cockles, as well as fresh fish caught by the local fishermen.
